Rosecrest Farm--a certified organic dairy--is proud to introduce our line of personally hand-crafted Swiss Cheeses, made with our own certified organic cow's milk*.
Rosecrest Farm is nestled in Washington's beautiful Chehalis valley, and has been producing award-winning milk for over 25 years. The family owned farm is owned and operated by Gary and Sharon McCool.
In the early morning hours, the process begins with the cows being brought in from the pasture to be milked.  Within minutes, the fresh filtered milk is transferred directly into the cheese vat.  This is where Sharon begins the cheesemaking process for the day.  She hand-crafts their cheeses with old world recipes and techniques making the Swiss cheese unique.

1...............The store will be closed February 20th thru 27th. We will be in Canada 
                 cheering on the Americans at the Olympics. GO USA!!!!!!                  
2..............April 2nd. & 3rd. Come see us at the "Spring & Beer Fest" at the Oregon 
                 Convention Center.  Show hours are 12 to 11 p.m. with FREE admission 
                 noon to 2 and $5. after 2 p.m.    
3.............April 11th.  Twin City Rotary Club"s 'Cheese & Wine Festival. Being held at
                the Washington Hotel in Chehalis. This is a fund raiser..so bring your wallets.  
4............June 11th we will be found with the Historical Museum Train Wine & Cheese
              ride.  More info will be posted to undate you.
5.............July 7th we will be hosting a big BBQ at the farm for the American Milking
               Shorthorn Convention. Interested in cows and cheese??feel free to stop by
               and meet some terrific people and learn everything you ever wanted to know
               about Milking Shorthorn cows. (They are the cows that provide the wonderful
               milk that makes our cheese.)
6..............August,,,We will be entering our Swiss Cheese in the American Cheese 
                Society Contest in Seattle. Will be fun to see where we stack up with the
                big guys.
                AND don't forget to come see us at the Chehalis Garlic Fest. We will be back
               with more Country Herb & Garlic Swiss for you and yours. Dates to be posted
               later.
